IKI Sushi was delivered for one of Metro Deco's long-standing clients as part of an ongoing rollout, bringing together two dining concepts within an existing tenancy. Working closely with the client through an Early Contractor Involvement (ECI) process, we helped shape the project from its early stages, developing practical construction solutions that maximised the available budget while delivering both a sushi train experience and a premium omakase offering within the same venue.
A key challenge of the project was reconfiguring the existing commercial kitchen by removing almost half of its footprint while maintaining its full operational capacity. This required careful planning, staged construction and close coordination to ensure functionality was not compromised. Metro Deco also repurposed sections of the existing banquette seating, integrating them seamlessly into the new layout while fabricating new upholstered seating to complement the refreshed design. The completed venue showcases our ability to combine value engineering, creative problem solving and high-quality craftsmanship to deliver hospitality spaces that are both functional and visually distinctive.
